Today has been a rather lazy day – after all the fun from Paddle around the pier and experiments yesterday I wanted an easy day but using up leftover fruit and veg was also the main goal of the day.

The other day I tried blended strawberries in porridge and it was glorious but this morning I tried the same but with cherries. It was no where near the same wonderful flavour – it seems cherry and porridge is not a  great mix! It was ok but I don’t think I will try this again blended.

Lunch was all about using up leftover chopped tomatoes and courgettes. This time I sliced the courgette thinly with the grater, brushed with olive oil before chucking in the oven for 15 minutes. At that point it was just a case of spreading on the chopped tomatoes and topping with thin slices of mature cheddar. Back in the oven for another 10 minutes and it looked incredible!

It tasted amazing and I’ll definitely have this dish again. It was so easy but full of flavour. Again I am not sure if BF will enjoy this dish. It was rather simple in its texture and flavour but I guess that is why I loved it.

By 2pm I’d easily managed 3 portions – as the days go on it is definitely getting easier. This project is also making me experiment more in the kitchen – I have never played around with so many ingredients in such a short time before!

In other news, today I have been busy sorting out guest blogs and interviews for this challenge! They are really exciting and I can’t wait to share these with you all very soon!
